By Steve Baxter

Chocolate Chip Cookies

2 ½ cups all-purposed Flour
1 tsp baking soda
½ tsp salt
1 cup (2 sticks) unsalted butter, softened
¾ cup granulated sugar
1 cup brown sugar, packed
2 eggs
2 tsp vanilla extract
2 cups chocolate chips (milk or semi-sweet)

Preheat oven to 375 degrees.

In a mixing bowl combine flour, baking soda and salt and whisk together.

Beat butter, sugar and brown sugar at medium speed until creamy. Scrape sides of bowl. Add eggs one at a time until combined and then vanilla on lower speed until well incorporated. Scrape bowl again as needed.

Add dry ingredients gradually into mixture on low speed until it is well mixed. Stir in chocolate chips by hand making sure all ingredients are incorporated.

Using a tablespoon sized scoop, a spoon, or your hands, place a tablespoon sized ball onto silpat or parchment lined baking sheets.

Bake for 9 – 11 minutes or until gently browned. Remove from oven and allow to rest 2 – 3 minutes on baking sheet before removing to cooling rack.
