Recipe: Jim's Rice Pudding

12 cups 1% milk (skim may be substituted)
2 cups granulated sugar
2 cups long grain white rice
2 Tbsp vanilla
1 tsp ground nutmeg
1 tsp ground cinnamon

Place milk, sugar, rice, and vanilla in a large pan and cook over medium high heat. Stir occasionally until contents are very warm, but not boiling. Stir in nutmeg and cinnamon. Cook until rice is just barely done.

Remove from heat and stir every 3-5 minutes until mixture cools down. Add more nutmeg and cinnamon to taste. Serve hot or cold.

***Do not cover pudding while warm it will continue to cook rice and will end up clumpy.
