Cooking With Soybeans

Soybeans and the multiple ways of how you can use them in your cooking is a terrific source of nutrition in your food storage and daily cooking. Use them for nutrition or add them to help make your food stretch. Below are some uses of soybeans:

• Cooked ground soybeans
• Sprouted Soybeans
• Soy Milk
• Tofu

Tofu Lasagna

1 14-oz package tofu, soft
¾ cup parmesan cheese
1 ½ cup sour cream
1 tsp powdered chicken bouillon
1 26-oz can spaghetti sauce
1 package large flour tortilla shells (cut into strips)
2 cups grated cheese

In a large bowl, combine tofu, parmesan cheese, sour cream and bouillon: set aside.

In a 9X13 pan, Make layers of spaghetti sauce, tortilla shells, and 1/3 of the tofu mixture. Sprinkle top with cheese. Continue layering until all the ingredients are used. Cover with foil. Bake at 350 degrees for 1 hour.
