Chicken Tortellini Soup
This is like Italian Chicken Noodle soup. Very comforting and super easy!
Ingredients
Extra Virgin Olive Oil
2 Shallots or 1 small onion, finely diced
3 Garlic cloves minced
2 cups (or to taste) Carrot slices
1 ½ tbsp fresh Oregano leaves, or ¾ tsp dried oregano
12 cups Chicken Broth
2 Tbsp Chicken Base (preferably) or 2 chicken Bouillon cubes
Breast meat from a Roasted Chicken
1 small pkg. Fresh Cheese Tortellini (fresh/refrigerated)
3 cups fresh Baby Spinach leaves
Salt and freshly ground pepper
Directions
In a dutch oven or heavy bottom pan, over medium heat, add a couple of tablespoons of Extra Virgin Olive Oil to nicely coat pan. Add shallots, garlic, carrot slices, and oregano and season with salt and pepper. Cook gently until softened, about 7 – 8 minutes.
Add chicken broth and chicken base and bring to a boil. Reduce heat and gently simmer 15 – 20 minutes. Add chicken breast meat and tortellini. Turn heat up a bit if necessary to maintain a constant simmer and cook until tortellini is al dente. Taste and season as necessary with salt and pepper.
Just before serving, add spinach leaves, as they will wilt quickly, and ladle into bowls.
