Baked French Toast with Homemade Syrup
1 loaf Texas Toast, French Bread, or 8 Croissants halved
8 large or extra large eggs
1 cup Heavy Cream
2 cups Milk
3 Tbsp Honey
1 tsp good quality vanilla
1 teaspoon ground Cinnamon
Salt
Arrange bread slices in a buttered or sprayed 9 by 13” baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, cream, milk, honey, vanilla, cinnamon, and salt and whisk until well combined. Pour mixture over bread slices, making sure all are covered evenly with the egg mixture. Spoon some of the mixture in between the slices.
Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees and bake uncovered for 40 – 45 minutes until golden brown. Serve with Homemade Maple Syrup and a splash of powdered sugar.
While French Toast is baking make Homemade Maple Syrup:
2 cups granulated Sugar
1 cup water
1 tsp. Maple Flavoring (like Mapeline or Maple Extract)
Combine sugar and water in a small sauce pan and bring to a boil over medium high heat. Let boil one minute or until all sugar is dissolved and not cloudy. Remove from heat and add Maple Flavoring. Keep warm until ready to serve.
This syrup refrigerates well and can be reheated on the stovetop or in the microwave.
